Zucchini corn cassarole

bakes 350 1 to 1 ½ hours

Ingredients

  • 2 Tlbs. Butter
  • 2 Tlbs. Olive oil
  • ¼ cup minced onions
  • ¼ cup small diced green peppers
  • 1 clove garlic minced (1 tea)
  • 2 Ibs. zucchini thinly sliced
  • 2 cups frozen corn
  • 3 eggs separated
  • ½ tea cayer re pepper
  • ½ tea paprika
  • 1 tea salt
  • 1 cup grated Italian cheese
  • 1 stick butter ½ cup
  • 2 tlbs sugar

Instructions

Sautee zucchini, onions, and green peppers till tender set aside to cool. Add 2 cups frozen corn let cool completely.

Add all seasonings mix in well add egg yolks, grated cheese, and melted butter.

whip egg whites to still fold into zucchini mixture.
Place in very large casserole bowl cover with foil.
Place dish in pan of hot water.
