Spinach Gnocchi

Ingredients

  • 2 Tbs. butter
  • ¼ cup finely chopped onion
  • 1 (10 oz.) pk. spinach, thawed and drained
  • 1 egg yolk
  • ½ cup ricotta
  • ½ cup Italian cheese
  • ¼ tea salt
  • ¼ tea pepper
  • 2 Tbs. melted butter
  • ¼ cup Italian cheese

Steps

  1. Bake at 425°F for 12-15 min.
  2. Cook onions in butter, add spinach, cook till all water evaporates.
  3. Combine egg yolk, ricotta, cheese, salt, and pepper then add cooled spinach mixture.
  4. Roll into balls, place in 9 X 13 pan.
  5. Pour melted butter over balls, sprinkle with Italian cheese.
