Spinach Gnocchi
Ingredients
- 2 Tbs. butter
- ¼ cup finely chopped onion
- 1 (10 oz.) pk. spinach, thawed and drained
- 1 egg yolk
- ½ cup ricotta
- ½ cup Italian cheese
- ¼ tea salt
- ¼ tea pepper
- 2 Tbs. melted butter
- ¼ cup Italian cheese
Steps
- Bake at 425°F for 12-15 min.
- Cook onions in butter, add spinach, cook till all water evaporates.
- Combine egg yolk, ricotta, cheese, salt, and pepper then add cooled spinach mixture.
- Roll into balls, place in 9 X 13 pan.
- Pour melted butter over balls, sprinkle with Italian cheese.
