Pumpkin Rolls

Ingredients

Cake

  • 3 eggs
  • 1 cup sugar
  • ¾ cup pumpkin
  • 1 tea lemon juice
  • ¾ cup flour
  • 1 tea baking powder
  • 2 tea cinnamon
  • ½ tea salt
  • 1 cup nuts, finely chopped

Filling

  • 8 oz. cream cheese
  • ½ stick butter
  • 1 tea vanilla
  • 1 cup powdered sugar

Steps

  1. Beat eggs till fluffy and add sugar.
  2. Fold in pumpkin and lemon juice.
  3. In a separate bowl, mix together the dry ingredients: flour, baking powder, cinnamon, and salt. Add to the pumpkin mixture and mix well.
  4. Pour onto a well-greased cookie sheet and bake at 350°F for 15 minutes.
  5. After baking, sprinkle cake with sugar and nuts, roll up in paper towels, and freeze for about 10 minutes or until filling is ready.
  6. For the filling, mix cream cheese, butter, vanilla, and powdered sugar until very creamy.
  7. Unroll cake, spread with filling, re-roll, and wrap in plastic wrap. Freeze until ready to serve. (One can of pumpkin makes 4 rolls)
