Pumpkin Rolls
Ingredients
Cake
- 3 eggs
- 1 cup sugar
- ¾ cup pumpkin
- 1 tea lemon juice
- ¾ cup flour
- 1 tea baking powder
- 2 tea cinnamon
- ½ tea salt
- 1 cup nuts, finely chopped
Filling
- 8 oz. cream cheese
- ½ stick butter
- 1 tea vanilla
- 1 cup powdered sugar
Steps
- Beat eggs till fluffy and add sugar.
- Fold in pumpkin and lemon juice.
- In a separate bowl, mix together the dry ingredients: flour, baking powder, cinnamon, and salt. Add to the pumpkin mixture and mix well.
- Pour onto a well-greased cookie sheet and bake at 350°F for 15 minutes.
- After baking, sprinkle cake with sugar and nuts, roll up in paper towels, and freeze for about 10 minutes or until filling is ready.
- For the filling, mix cream cheese, butter, vanilla, and powdered sugar until very creamy.
- Unroll cake, spread with filling, re-roll, and wrap in plastic wrap. Freeze until ready to serve. (One can of pumpkin makes 4 rolls)
