Gnocchi
Ingredients
- 4 lbs. peeled, cubed, and mashed potatoes or 12 servings instant potatoes prepared as per box directions
- 2 Egg yolks
- 1 Tea salt
- 1 ½ cup flour
- ½ cup grated Italian cheese
Steps
- Into the mashed potatoes, add egg yolks, salt, flour, and grated Italian cheese.
- Mix into a soft dough and turn out onto a floured board.
- Knead until smooth but soft.
- Roll into a rope, cut, and create indents with a fork.
- Place on a floured cookie sheet and freeze for about ½ hour.
- Bring a large pot of water to a boil; place the gnocchi into boiling water and then scoop them out and layer in a serving dish with the desired sauce. Repeat till all are cooked.
