Gnocchi

Ingredients

  • 4 lbs. peeled, cubed, and mashed potatoes or 12 servings instant potatoes prepared as per box directions
  • 2 Egg yolks
  • 1 Tea salt
  • 1 ½ cup flour
  • ½ cup grated Italian cheese

Steps

  1. Into the mashed potatoes, add egg yolks, salt, flour, and grated Italian cheese.
  2. Mix into a soft dough and turn out onto a floured board.
  3. Knead until smooth but soft.
  4. Roll into a rope, cut, and create indents with a fork.
  5. Place on a floured cookie sheet and freeze for about ½ hour.
  6. Bring a large pot of water to a boil; place the gnocchi into boiling water and then scoop them out and layer in a serving dish with the desired sauce. Repeat till all are cooked.
