Chicken and rice cassarole
Ingredients
- 1 tibs. Butter
- 1 tea oil.
- 1 cup chopped fresh mushrooms
- ½ cup chopped onion
- 1 lb. boneless chicken breast cut into ½ inch
- 2 cloves garlic minced (2tea)
- 1 10oz box frozen broccoli thawed and drained
- 1 can cream of mushroom soup
- 3 cups cooked rice (1 ½ cup uncooked)
- 1 cup Velveta cheese diced
- 1 can water chestnuts sliced
- ½ cup sour cream
- ¼ tea black pepper
- I cup shredded cheddar cheese
- ½ cup bread crumbs
Steps
Saute mushrooms in Butter and oil.
Add Chicken pieces cook till done:
Add garlic cook a few minutes more add Velveeta and soup.
Cook till cheese melts.
Remove from heat stir in cooked rice,
Broccoli, water chestnuts, sour cream, and black pepper.
Place in large deep casserole.
Bake for 15 minutes at 400.
Lower to 350 top with bread crumbs and shredded cheese, bake till cheese melts (5 minutes)
