Almond Chicken
Ingredients
- 1 lb (2 large) boneless chicken breast, cut into small pieces
- ½ cup slivered almonds
- ½ cup green onions, ¼ inch slices
- 1 cup water chestnuts, diced
- 1 egg white, slightly beaten
Marinade (Mix #1)
- 1 tbsp soy sauce
- 1/8 tea garlic
- 2 tbsp sugar
- 2 tea corn starch
- 1/8 tea ginger
Sauce (Mix #2)
- 2 tbsp soy sauce
- 2 tea sugar
- ¼ cup chicken broth
Thickening (Mix #3)
- 2 tea corn starch
- 2 tbls water
Steps
- Place chicken in beaten egg white.
- Mix well with Mix #1 ingredients and let marinate for 1 hour.
- Heat 3 tbls oil in a wok or large fry pan till very hot.
- Add almonds and fry till golden brown, remove from oil, set aside.
- Add chicken to the same oil, stir fry, and drain off oil when chicken is cooked.
- Remove chicken from pan, reheat pan, add 2 tbls oil.
- When hot, add green onions and water chestnuts, fry for a few seconds.
- Add Mix #2, bring to a boil.
- Then add Mix #3, cook till thickens.
- Add chicken, nuts, and bring up to simmer.
- Serve over white rice.
